How to buy more than 1000 share? Isn't share limit is 1000?

1000 share is the limit if the property has never been bought by anyone ever. If you buy the property though, new shares keep appearing for the property over time. Just check the map in 1-2 weeks and you will see new shares for the same property appear.

What are best properties to buy? i started playing a few month ago, buyed all food type properties, but they now worth nothing.

resembling the real world, the best properties to buy are lands. But there is not such thing as best here because it usually comes to flipping properties to making money in the earlier days. Just buy anything that is on a discount in trends and flip it to the bank to make a profit. Bank deducts 20% as tax so u should be aware that the properties u buy must at least be a 20% discount. There are many ways to make money in this game with even properties at lower discounts or no discounts. It's very difficult to answer everything in the comments. I recommend you watch all the videos to this series starting from EP. 01. That will give you insights on various aspects of the game and also on various tactics to maximize profits.

What is that influence?

It was basically introduced as a concept of popularity to buy land based properties. So in addition to requiring cash, land based properties would also require you to have influence and contracts to acquire them. But that plan failed miserably so the game got rid of contracts in that sense and influence is now mostly irrelevant from what I understand. (I may not be 100% right)
