italian food is whatever. out of all the restuarants you can go to in nyc, japanese, french, steakhouses, greek, etc, i'd probably rank italian at the bottom of my list. i can make pasta at home. if i'm going out i want to eat something unique and flavorful, not eggplant parmesan. don't get me wrong the mediterranean seafood side of it can be amazing when its done right but u don't see that often. these guys seem to do it right tho

+SwissCheeseOnaPlate let me explain this one better the inside of meat is sterile, the outside surface is not the smaller the meat is cut, the larger the surface area of the bacteria to multiply in a big steak lasts much longer than some diced meat diced meat lasts much longer than minced, like two days when you open a package of mince meat, it will only last for a day if you have to stricly follow guidelines "how would you eat beef tartare?" either with a spoon or fork, maybe fingers if you wanna be a savage what you wanna ask is "how do you prepare beef tartare?" get some awesome fresh meat, not mince then there are two ways one is chopping it yourself, the other is putting it into processing machine serve asap, bacteria multiply every 20minutes at room temp if done correctly, shit should be pretty low risk
