This winter special kadhi recipe made using beautiful green garlic and healthy bajra flour.
LASOONI BAJRA KADHI
Ingredients
1 small bunch fresh green garlic (hara lasoon)
2 tbsps pearl millet (bajra) flour
3 tbsps yogurt (dahi)
1 tsp ginger-garlic-green chilli paste
Salt to taste
½ tsp Tata Sampann Turmeric Powder
1 medium onion
1½ tbsps ghee
2 tsps oil
1 tsp mustard seeds
1 tsp cumin seeds
¼ tsp asafoetida (hing)
10-15 curry leaves
Tempering
1 tbsp ghee
1 tbsp chopped green garlic
A pinch of fenugreek seeds
2 dried red chillies, broken
To serve
Steamed rice
Onion wedges
Method
1. Take pearl millet flour in a large bowl, add yogurt, ginger-garlic-green chilli paste, salt, Tata Sampann Turmeric Powder and ½ cup water and whisk till smooth. Add 2 cups water and mix.
2. Finely chop green garlic and thinly slice onion.
3. Heat ghee and oil in a non-stick deep pan, add mustard seeds and cumin seeds and sauté for a few seconds. Add asafoetida and curry leaves and mix.
4. Add chopped green garlic and sauté well. Add sliced onion, mix and sauté till onion turns translucent.
5. Pour the yogurt mixture, stir and cook on high heat till the mixture comes to a boil. Reduce the heat to low, cook for 8-10 minutes.
6. Heat ghee in a small tempering pan, add green garlic and sauté till golden brown. Add fenugreek seeds and dried red chilli, sauté for a second and pour into the kadhi.
7. Transfer the kadhi into serving bowl, serve hot with steamed rice and onion wedges.
