Speaking to his comment on movement... There's a phrase every cook knows... "if you can lean, you can clean" which means if you have time to take a momentary break, then you have time to clean up and that should be your focus. So there is a concept of never stopping... The only time Chef's understand breaks is for a cigarette, which is basically a stress/anger management tool in kitchens.

I love that story about burning his foot and kept working. I once cut the top of my thumb off with on some carrots because I was new and didn’t know to sharpen it first. Then (because I was new) I was on a solo double dish shift the next day. The restaurant industry is basically like, if you didn’t completely cus your whole hand off, you have no excuse to not keep going.
