Looks tasty. Reminds me of something I ran as a special one time. I was sous-chef at a Japanese-ish restaurant. They'd brought in a new chef. New chef ordered a bunch of product and tried to launch a new menu that wasn't even a little Japanese, so they fired him. I was left to Japanese-ify all his expensive stuff. The most successful thing I came up with was duck confit spring rolls with pickled shiitakes and charred negi and momiji sauce. God damn those things were tasty.

I make taco egg rolls. Chicken, ground turkey, beef, and pork. My mom has been making them forever. I have to try this. I have made them with Barbacoa and it was fire. I like to make huge batches of slow roasted chuck or brisket. Then I divide the meat and freeze it. I do it in a pressure cooker but it still takes all day. So I bang it out in one day but I make serval dishes from it. Pot roast fries are everyone’s favorite. The only draw back is the price. Chuck is more expensive than filet and ribeye now.

Egg rolls actually seem an amazing vehicle to hold the birria. Tacos/tortillas are nice (and traditional?) but let's be honest, the birria can sometimes fall out and it can be a bit finicky in the pan to fry them up. Egg rolls hold together well, dip nicely... this is exciting.

You can say Pho, but you cant say birria (Be-dde-ah). As a Chino, ive made a version of taco eggrolls. If you take your cooked meat and rolling it in eggroll rice paper then deep fry the eggroll, plate and top with garnish or birria sauce or queso or whatever.
