I'm Indian, and might I say, a very good cook! I saw this and was intrigued by the time spent reducing and thickening that lovely tomato sauce, and having the patience to not steam the potatoes first. I gave it a go this weekend (made aloo chana but similar process) and used his slower method and it was EXCELLENT. Not really a quick method, but when and if you have the time to lovingly cook a delicious plate of food, I would certainly recommend this recipe. The potatoes soak in so much more flavour, rather than just a surface flavour, and the tomato gravy is rich, thick and layered with spice.

I've never tried Saag Aloo in an Indian Restaurant before so had nothing to compare it with. Bombay potato yes, although prefer to cook it myself! So I watched this and was truly inspired to cook it immediately . Sooo quick and easy and I had some Spinach begging to be used up. OMG it was the most incredibly delicious recipe ever. No wonder it is such a popular dish. Thank you for sharing.

It's so sad. That leaf spent it's whole life being carefully nurtured, soaking up the sun, enjoying the company of the other spinach leaves only to be left abandoned while its mates got boiled alive. :)

This dish is so tasty. I made it to go with your chicken hundi and the Bangladeshi mutton dish (the one where you steam the tomato skins off). Everyone raved about them and said were best curries they had ever had including those not made at home. Been cooking your dishes for a few months now and every one is amazing. Excellent preparation! My mother was cutting the potatoes half the other way crosswise and not horizontally. The spinach you have added at the end made this recipe a beautiful and different touch. I will try this as we need more greens in our diet. Thank you so much for sharing this recipe.

Any indian grocer worth their salt should sell these as well as a large array of others. Mine cost 12.95 so they’re really cheap. Common brand is ‘Kitchen king’

look for aluminium frying pan or aluminium curry pan and they'll come up. awaunion on ebay currently has some different size ones. They are a common sight in kitchens where you can buy 20 at a time because they're cheap. Very handy pans!
