Lauki Kofta Curry is a delicious dish made from grated bottle gourd (lauki), which is mixed with spices, shaped into dumplings (koftas), and deep-fried to golden perfection. These koftas are then simmered in a rich, flavorful tomato-based gravy, seasoned with aromatic spices like cumin, coriander, turmeric, and garam masala. The result is a creamy, mildly spiced curry with soft, melt-in-your-mouth koftas.

Ingredients quantity
Bottle gourd 1 no
Oil for frying
Ginger chopped ½ inch
Green chilli chopped 2 no
Carom seeds 1 tsp
Fresh coriander chopped 1 tbsp
Gram flour ½ cup
Salt to taste
Water as required
Onion chopped 2 no
Tomato chopped 2 no
Green chilli 4 no
Water as required
Ginger garlic paste 1½ tbsp
Oil 2 tbsp
Asafoetida ¼ tsp
Bay leaves 2 no
Black cardamom 2 no
Cinnamon stick 1 inch
Green cardamom 4 no
Black pepper 4-5 no
Cumin seeds 1 tsp
Water as required
Gram flour 1 tbsp
Curd ½ cup
Red chilli powder 1 tsp
Turmeric powder ½ tsp
Coriander powder 1 tbsp
Cumin powder ½ tsp
Garam masala ½ tsp
Green cardamom powder ½ tsp
Tamarind paste 1 tbsp
Salt to taste
Fresh Coriander chopped 1 tbsp
Ghee 1 tbsp
Fresh Coriander chopped for garnish Method
1. Take a lauki and peel them well and grate it in a bowl.
2. Place a kadai on medium flame and heat oil.
3. In a lauki add chopped ginger, chopped green chilli, carom seeds, chopped coriander, gram flour and salt mix well to form a thick batter.
4. Make small balls (koftas) from the mixture and deep fry them until golden brown. Remove and drain on paper towels.
5. In a mixer jar add chopped onion, chopped tomato, green chilli, water and ginger garlic paste grind in a smooth paste.
6. Place a kadai on medium flame and heat oil. Add asafoetida, bay leaves, black cardamom, cinnamon stick, green cardamom and black pepper let them splutter.
7. Add cumin seeds and sauté well.
8. Add blinded paste and sauté for 10-12 minute.
9. In a mixing bowl add gram flour, curd, red chilli powder, turmeric powder, coriander powder, cumin powder, garam masala, green cardamom powder and water mix well.
10. Add tamarind paste in kadai and sauté well.
11. Add salt and mixture of curd and mix well. Stir and let it simmer for a few minutes.
12. Add chopped coriander and boil well.
13. Gently add the fried koftas into the simmering gravy. Cook for another 5-7 minutes so the koftas absorb some of the gravy flavours.
14. Side out in a serving bowl and garnish with chopped coriander & ghee.
15. Serve Lauki Kofta hot with roti, paratha, or rice.
