Ingredients
To make Lauki Kofta Balls
Bottle Gourd/ Lauki - 1 no. medium size
Onion - 1 no. (chopped)
Green Chillies - 2 nos. (chopped)
Ginger piece - 1 no. (finely chopped)
Garlic cloves - 2 nos. (finely chopped)
Chopped Coriander Leaves
Turmeric Powder - 1/4 tsp
Salt - 1/2 tsp
Chilli Powder - 1 tsp
Cumin Powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Besan / Gram Flour - 1/4 cup
Oil for deep frying
To make Onion paste
Ghee - 1 tsp
Oil - 2 tsp
Onions - 2 nos. (thinly sliced)
Chopped ginger
Garlic cloves - 3 (roughly chopped)
Green Chillies - 3 (roughly chopped)
To make the Lauki Kofta Curry
Ghee - 2 tsp
Oil - 1 tbsp
Cumin seeds - 1 tsp
Bay Leaf - 1 no.
Ground Onion Paste
Salt - 1 tsp
Kashmiri Chilli Powder - 2 tsp
Turmeric Powder - 1/4 tsp
Cumin Powder - 1/2 tsp
Coriander Powder - 1 tsp
Garam masal powder - 1 tsp
Tomatoes - 4 nos. (pureed)
Water - 1 1/2 cups
Kasuri Methi
Lauki Kofta Balls

Chopped Coriander Leaves
Method
1. Peel the skin off the lauki and grate it. Put the grated lauki in a muslin cloth and squeeze off the water.
2. Transfer the dry lauki to a bowl and add onions, green chillies, ginger, garlic, coriander leaves, turmeric powder, salt, chilli powder, cumin powder, garam masala powder and mix well.
3. Add besan to the mixture, mix again and prepare the koftas.
4. Heat a kadai with oil and deep fry the koftas until they are golden brown in colour. Keep them aside.
5. Take ghee and oil in a pan. Add onions, ginger, garlic and green chillies. Saute for 4 mins and cool them down. Transfer them into a mixer jar and grind into fine paste.
6. To the same pan, add ghee and oil. Add cumin seeds, bay leaves and saute.
7. Drop in the ground onion paste, cook for 5 mins and add salt, kashmiri chilli powder, turmeric powder, cumin powder, coriander powder, garam masala powder and mix everything well.
8. Keep the flame on low and add the tomato puree.
9. Cook until the gravy is thickened and add water. Cook for 5 mins.
10. Once the oil separates, add kasuri methi and lauki kofta balls. Mix and simmer for 3 mins.
11. Turn off the stove and transfer the gravy into a serving bowl.
12. Place the koftas in gravy, garnish with fresh cream and chopped coriander leaves.
13. Lauki Kofta curry is ready to be served hot along with any Indian bread of your choice.
