Do you think possibly you can do an episode on Italian cheeses, e.g., the differences, when to use or not use, what cheese goes good with certain dishes, etc. I think that would be very interesting. My mother always added one tablespoon of bread crumbs to her frittata (although not on the top and bottom because she did them always the traditional way in the frying pan and then flipping). She never put a soft cheese in it, but used 1/2 parmigiano and half romano, quite a lot of both.

It was too hot to use the oven in the house, so I baked the frittata on the outdoor gas grill in a cast iron skillet and it came out perfect. A great tasting and easy recipe.

I would dust the pan with finely grated parmesan! Its a technique I've seen used with making souffles. The parmesan will make a super flavorful coating! You can just leave the bread crumbs out of the egg mixture; most fritattas don't add bread crumbs anyways.

Zucchini doesn't have much flavor, to your ingredients, I would have added 2 or 3 garlic cloves to the onions and a few teaspoons of dried basil.
