This is AMAZING! Thank you!! I have just started making cakes for friends and family and I have been trying to figure out what size of cake to make to fit their needs. I have been searching the web to try to figure this out and all the resources on cake cutting I have come across do not mention how many layers the cake has! To a cake "newbie" not mentioning how many layers is very confusing because as you mentioned in your video the number of layers decreases the serving size! So thank you!!! Now I can choose cake sizes with confidence!!

Hi Marianne! Glad you thought so! If a customer is requesting 20-25 servings then I'll tell them it will need to be a two tiered cake consisting of an 8" and a 6" cake tier. I'll tell them that that will give them a "minimum of 25 servings" and I charge for the full 25 servings. I hope that helps and thanks for watching! :)

This is so helpful! I'm not used to thinking of wedding cakes being cut this way. It seems like most of the time they are cut in rectangular pieces. I had been confused because it seemed that the number of servings in a regular 8" 2 layer birthday cake, for example, would be totally different than the number of servings in an 8" tier of a wedding cake.; But your method seems to be the same for any type of cake, correct? This really seems to simplify the process. You are a wonderful teacher! Your tips make so much sense!

Hi Laura, Im loving your tutorials!! thank you so much. If you were to deliver this cake to a venue, how do you know what cake serving size does the kitchen staff use to cut and serve the cake? Do you give t them your serving guide? what about the size? for wedding there is like a standar size as well as for party size which is larger. How do you handle that with the venue? thanks

Thank you so much! So glad you're enjoying them! Our servings are pretty generous and our clients know exactly how many servings they can get out of our cakes. We've never been asked for a serving guide nor have we ever been asked by the venues we've delivered to how to slice up the cake. I guess we've been pretty blessed to not have any issues in that department. Our slices are usually 2" thick and roughly 5" to 5.5" in height. Our servings are the same for weddings and your typical celebration cakes. It's easier for us not to have different servings depending on what type of event it is. Makes life easier. Thanks for this great tutorial Laura!! I make my own cutting diagram as well to give to friends if I'm not able to stay and cut the cakes I make for them. It use to kill me when I showed them how to cut it and the next time they butcher the servings.. Lol. The diagram was a better aid! Every designated cake cutter at a party should have this tool!

Thank you for a very useful tutorial. How about if I need to get full wedges from a 9”x2”” round cake as I will be selling cakes to a coffee shop and as you know, in coffee shops, they always serve full wedges. I will be selling them carrot cakes with cheese frosting which is a double layered cake and sticky date cake with caramel sauce which will be of a single layer. What would be an acceptable size of each wedge in that case please? Thank you!

Hello! I am loving your videos & would like to know if you price this 10" inch cake based on 24 0r 40 servings if I will be making the cake 5" tall? or do you ever make 4" tall & then charge only for 24 servings.

HI Elizabeth! I apologize for JUST NOW seeing this comment. I say a 10" cake with 3 full layers of cake provides a minimum of 35 servings. That's how I slice it myself. My cakes are typically 5.5" - 6" in height. I hope that helps and thank you for watching. :)

Hi, I usually do 2 layer cakes but I always use the 3 inch tall cake pan, so I always have 2 high cakes and perfeclty tall for decoration, if you are using 2 inch tall cake pann then I'll suggest do a 3 layered cake. Hope this helps.

You're welcome! Yes M'am, if they want that many servings I would make either just an 8" tier OR if they like the look of the tiered cake, I would make a small two tier cake consisting of a 6" and a 4". If the cake sizes are a bit bigger than what they what, I still charge them for all the servings. If they ONLY need say 14 and my 8" serves 16, I still charge them for all 16 servings. Know what I mean? Hope that helps. :)

hi honey. if fondant is used and decorations do u charge extra for designs separate from what the cake would come out if it was a simple icing cake? I always find myself struggling with this and in the past have not really charged what my work was worth

I always suggest to come up with the cost of the cake alone with no decoration at all, and then figure out what you would charge individually for all the cake decorations then add those amounts together. That's the TRUE worth and value of your cake. Always charge what your work is worth and more importantly, your time. :)

normal it's per slice hun. but really it's up to you how u want to do it. the best way would be to charge per slice this way you are not charging to little or to much. now the prices per slice is really up to you. allot of home Bakers ove know start at $4 and up per slice.

+Daisey Ruiz HI Daisey! We charge per serving, but, the price per serving completely depends on the intricacy of the design. The simpler the cake, the less expensive per serving. The more intricate the design, the more per serving. You need to always make sure you are being compensated for your time. As a cake artist, when we feel short-changed it's because we don't charge enough compared to the amount of time one spends on a cake. :) How much you charge depends on what you feel your time and work are worth. I often hold webinars where I teach cake artists how to charge for their work. Thank you for watching Lety! This tutorial is meant to help you be able to do any size on your own. All you need is to use cardboard cake boards in the 12" and 16" sizes you need and draw the lines yourself with a ruler. It will work out just fine, guaranteed. I hope that helps. :)

You charge by the number of servings, rather than the amount of cake?

The number of servings is the amount of cake. Now, if you're asking if I charge by the "weight" of the cake, definitely not. Some cakes might be heavier than others just simply due to what ingredients they're made of or what filling they have. You always charge by servings with specific cake tier sizes. Yes, what my subscriber said down below. I've never had anyone ask me how to cut it. I just expect them to know I guess... But, if you feel your clients will have trouble knowing how to slice a cake, provide them a diagram. :)

That's so great to hear Teodora! So glad you found this tutorial and it helped you. You're VERY welcome! I would say the 9" should give you about 22-24 servings and the 7" about 16-17 servings. If it's 3 layers each about 1.5" - 2" in height. Hope that helps and thanks for watching! :)

If an 8" cake has 3 layers of cake it should have a minimum of 16 servings and up to 20.

I do something similar, only with wax paper. I outlined the actual pan, cut it out, and I fold it as small as I can.(have to save my cake boards.lol) That's how I show or predict how many slices a client can get.. I'm kind of bad when it comes to a ruler. Lol

Im late at asking this NOW. but for future ill stil ask. I jist finished making a 3 layer 10" size. Which is supposed to serve 30-35. Thats the calculations looking at other charts previously. Was i correct? Or no? It is only my 2nd Order from a customer. Im in Texas. Tell me did i ROB myself charging only $55 for this cake? Simoly buttercream and candy toppers. Truly even if i was charging $85 for it. Im feeling a little bad tonight because it took a lot of my last 3 days and i have little ones. I feel bad all that time i spending not giving full attention to kids to only charge $55. And please if you must lecture me. Go ahead, im all hwre FOR LEARNING! AND I REALLY DONT WANT TO RIP MYSELF OFF, WITH KNOWING AND NOT HAVING THE ONFIDNECE TO GIVING MY QUOTES. BECAUSE I DOTN KNOW BETTER. TIA!! LOVING YOUR VIDEOS! I GOT HOOKED WITH THE LEARNIGN TO USE THE TAPPITS! I ALMSOT THREW THOSE THINGS AWAY! YOU SAVED THEM FROM THE TRASH,AND SAVED ME A HEADACHE 😄

We go into great detail as far as how to know what to charge and how to value your time. I know how disheartening it can be when you know you didn't charge enough. But, it's experiences like the one you just went through that will teach you exactly what not to do and how to value your time. Definitely you severely undercharged for your cake. The number of servings for the 10" sounds about right. I highly recommend you make your own cake serving chart like I show in this tutorial. great tips, but how would the customer know to cut the cake the way you say it should be cut? Do you tell them ahead of time? I'm mainly asking about the 10" cake. Also, how did you come up with your prices. Is it something you came up with yourself or did you learn it somewhere? When I give people my prices they always think its too expensive? The thing is that people don't understand the labor and the cost it takes to make a specialty cakes. Please help. You don't have to say how much you charge but, just an idea of how the prices came to be, so that I can feel confident when I give my prices. Pleaseee!

I make 2 layer cakes. I did the math based on this tutorial and the difference between mine and yours is $212 (mine at $4.25/serving) $240 (yours at $6/serving.). I have always calculated at Wilton Wedding cake cut. So for an 8 and 10", it totals 50 servings at $4.25=$212. With this serving count (more realistic) the cost can be changed to $6/serving and the same cake will start at $240. My question is this... My cost is without fondant. Do you charge the same price whether you are using fondant or not? I have never heard you say there was a difference in price. If I was to do this with fondant, my cost would increase by $1.25/serving.

HI Bonni! We charge the same whether the client wants fondant or not. Whether someone charges for fondant or not is a personal choice. We don't charge simply because most people "expect" the price to be less if there is no fondant. Usually clients ask for no fondant AFTER they've received a quote with fondant and they think that by requesting no fondant, it's going to lower the price. We eliminate this loophole by not charging extra for fondant, or less without. How do you determine whether to do two layers or three layers?
