Today’s meals and recipes bring back memories of my grandmother. She soaked her chicken in buttermilk before frying and cooked her collards greens with bacon - so down home delicious.

Yessss, I'm in here Lauren! When I saw macaroni and cheese, my soul leaped! Glad to see you add some oil to your collard greens. I fry some fat back meat after I have washed away all the salt that preserves it, then I add the grease from the meat to my greens. Next, I add a par boiled turkey neck with water added to simmer my greens. Some of my people also put two large ham hocks in the greens for that delicious ham flavor. I, too have tried ham hocks. My late aunt Elizabeth who was better known as BigMama put bacon grease and fatback meat grease in her collards. She worked for a lawyer for years not only as their housekeeper, but she was their cook. They would have her cook their Thanksgiving dinner for them every year. And paid her extra! Her food was that good. Your greens look Delicious 😋.

Where were you when my children were in school, and I was a busy working mom? Oh, I know…you were in school, too. Lol You are my older daughter’s age. But, I adore everything you do! Your energy level surpasses any I’ve ever had…even when I was in my twenties and thirties. After a day of teaching elementary aged children ( my dream fulfilled) I’d come home and be exhausted. Phew. To have the meals you create, we wouldn’t be eating until 7 at night. But, you definitely make things look easy because of your preparation and organization. You’re the best, Lauren. I do have a question, or two…do you give the veggie scraps to the chickens? And could you tell me again about your nails? I love your videos, and get excited to see what you’re doing. ❤️

I can't tell you how accomplished i would feel prepping a weeks dinners, like these. Like, i feel like i might as well be shooting to be an astronaut. But you can do it. So, i should try it. I think seeing someone do something that seems insurmountable from beginning to end is really really helpful. And I'm not beating up on myself, i can probably clean in a way others would find impossible. But cooking.... lol

Yes about Pinterest, but also several Pinterest recipes I’ve tried are terrible, it’s a joke in our house. I like to get takeout menus and use that as inspiration for meals every once in a while.

I love Collards and turnip greens with bacon. I'm from the south. You may know this, but collards if you grow them, they are sweeter when frost hits them. It they are bitter you can add a small amount of sugar. I know you and fMily eat healthy. Just fyi. Love your handwriting.

I love collards! You cook like you are from the deep south and I love it! Your fried chicken method seems quicker than mine. I poach the chicken first so when I fry it the chicken stays crispy. Its a family recipe. We also dip it or drizzle it with a honey and red pepper flake mix. If you are looking to change it up, because yes I agree, pintrest recipes get boring. Love your recipes! Since you like southern recipes look up pig pickin cake and hoe cake🥰

Smoke precooked turkey drumsticks or turkey neck is absolutely fantastic for collard greens.I always like to try something new. I'm definitely going to try the bourbon bacon.
