Yummy Avial..We make same way. But do not add rice..still avial will be thick if we keep less water..also i don't add parangikai..avial colour will change.. will not be white..drumstick must and it does not break

Drumstick should b separately cooked in an open pan so we can monitor it, being not over cooked then there will b no fibre at all. Then u can add the cooked drumstick, just my 2 cents. Pardon me

I had a neighbour who made Aviyal with tamarind . It would not turn sour . Her Aviyal was very tasty . She added lot of coconut oil. Her entire cooking in coconut oil. A piece of lemon sized tamarind tightly rolled into a ball would be dropped into the water and vegetables cooked in it. Rest same . Discard the tamarind ball.

முருங்கை காய், சௌசௌ, சேனைக்கிழங்கு சேர்த்துக்கொள்ளலாம். தேங்காய் பச்சைமிளகாய் மட்டுமே அறைத்து கொண்டால் ருசியாக இருக்கும். கடைசியில் தேங்காய் எண்ணெய் அப்படியே மேலே விடவேண்டும்.

For avail no seasoning it should be something dry. It looks like kootu. You have to differentiate avial from kootu. While grinding don't add water. And coconut oil is must for garnishing. In nagercoil we won't use peas, pumpkin. Yam is must, vazhuthalangai also must
