If you’re a lazy cook the crockpot will be your new best friend!
This Chicken Enchilada Casserole only needs 5 ingredients! 💃🏽
And you barely need to do any work because the Crockpot will do it all for you! 😀
Ingredients ✍🏾
2 lbs of Chicken Breast or Thighs
1 (19 oz) Can of Enchilada Sauce Green or Red (I used Green)
2 Cups of Lite Shredded Cheese
1/2 Cup Jalapeños (optional)
8-10 Corn Tortillas (small)
Salt and Pepper to taste
Directions 👩🏽🍳
✨1. Place chicken into the crock pot and season with salt and pepper. Top with the entire can of enchilada sauce.
✨2. Cook on high 4 hours or low 8 hours.
✨3. Then open the lid and shred Chicken with 2 forks. It will be very soft.
✨4. Cut up tortillas into small pieces then add them to the crockpot. Add 1 cup of cheese and mix together.
✨5. Add 1 more cup of shredded cheese and top with sliced jalapeños.
✨6. Cook on high for an additional 30-45 minutes or until the cheese is nice and melted.
✨7. Serve and enjoy
I love using the crockpot especially on days I don’t really feel like cooking!
