I made this and it was so delicious! I don't own a traditional slow cooker, so I used the slow-cook setting on my instant pot for the first part, then transferred to a casserole dish to finish.

UPDATE: I made this two days ago, and it was absolutely fantastic!! It was so simple, just dump & go, and the flavor was simply delicious: we barely had enough leftovers for my lunch the next day!!

This was a really good dish to make. I made some very minor changes. I used 505 roasted green chilie sauce medium. I found one jar was sufficient. I added sliced onions and minced garlic versus powdered and also diced the cream cheese and used boneless chicken thighs. I prefer them to chicken breasts. the pepper jack cheese was a good extra flavor but omitted the extra sauce towards the end. Very good, hearty dish especially if it's cold outside. Excellent!

Love this easy peasy one pot cooking recipe. Would work great with pork shoulder too to make pork chile verde casserole. I need to add some fresh cilantro, chopped onions and pickled jalapenos in the end 😊👍

I'm making this dish as I type this message. I made a few changes. I used chicken thighs that's what I had in my freezer. Also I didn't have salsa verde but I do have tomatillo salsa which is also green and I used monterey jack cheese. Same elements and great flavor. I also added corn peas and carrots for the one pot wonder. Need to have veggies. I love crock pot meals and would love to see more and I'm topping it with chives and parley. 👍💯

Oh I love gooey casseroles like this 🤤 I already do something very similar with taco seasonings and red salsa, but without the cheese or tortillas. Sometimes I'll add black beans and/or corn, and eat it with rice or quinoa. A very versatile recipe! [e] Made this tonight and IT IS SO GOOD! Only used one jar of salsa too, that was plenty 👍 And someone I cook for suggested it could make for a good a dip by leaving out the tortillas and breaking down the chicken really well, add the second jar of salsa if necessary so hmmm

Yes! Please! More Crock Pot recipes and/or alternate ways other than an oven. This summer you used the oven for quite a few recipes. I don't have central air. Cooking brings temps in my kitchen over 90 degrees.

Crockpot! I usually make this recipe in a nonstick skillet on my stovetop. I omit the cream cheese and use Mexican crema as a topping (I'm generous with it 🤭). A squeeze of lime and a sprinkle of cilantro; it either gets served in a puffy taco or I'll use large tortilla chips as a scoop, dip style. So good.
