Been making this since I was a teenager looking after my younger siblings. It's so good, easy, filling, and really important in these trying times....cheap. I just make it easy on myself by just putting my rice and liquid on the bottom, add some salt and seasoning to it and stir, then top with the chicken and season that. Easy peasy. I often add a pan of cornbread with this meal, I just use the jiffy box mix, add a big blob of sour cream (acts like buttermilk) , salt to taste, and blend up half a tomato, half an onion, and one jalapeno with the milk and egg the box calls for. Mix it up with the dry mix and sour cream, pour in a hot buttered cast iron and bake. So good.

Can I give you a helpful tip... mix your seasonings in the broth first .. lay the rice in the pan then pour broth in. Lay chicken in and give a light dusting of seasonings on any chicken that's above the broth. Also to cut cooking time tent it with foil. That will keep the chicken from drying out. I'm the cook in my whole family and I'm use to cooking large meals.

My family makes a chicken and rice casserole like this. If you add 1 or 2 bags of frozen broccoli it becomes a one dish meal.sometimes we sprinkle cheese on top. Also, you could still serve a side salad and garlic toast or dinner rolls. Sometime rice is left behind. i just serve it as a starch later in the week or make a soup out of it. I like your substitutions. It looks delisous!

Good Job....what I do is bake my chicken first about half way, I season it and bake it on top of a bed of onions and celery. Once my chicken is half done I drain the stock into a measuring cup, clean my rice and add the rice into the pan with my chicken, add the right amount of chicken stock to my already made stock and pour in the pan with the rice and chicken and then I finish baking. The reason I bake the chicken first is because if you add the stock first you'll wash away the seasoning on the chicken. So bake it first to keep the seasoning in tact.

Looks good! but your making more work for yourself!....mix the rice, broth, and cream of chicken, all together, add it to the dish, season your chicken off to the side, THEN, just lay it on top of your rice mixture, whats the point of pouring the rice on top of the chicken, ONLY to use your hands to put make sure the rice is on the bottom in the liquid.

We also add in stuff like tomatoes, peas & carrots, corn, onions, chives, pimientos and sometimes weet peppers. It's very delicious after adding l the herbs and spices and seasonings. Its served with a side of macaronie salad, fresh salad or Cole slaw :)

Yummy. This brings back memories of my childhood when my mom made this. Only changes were at the bottom of the dish she layered a large onion in rings, then placed the chicken on top with salt and pepper and added 2 cups raw rice on the chicken, then used enough milk to barely cover the rice, she then used about 2 tbsp of chicken base on top or I use better then bouillon, and nothing was mixed. She just covered the top and baked it at 300 for about 2 hrs or until done. You can check it half way through for more chicken base if needed, but everything comes out perfect like you mixed everything together. Every time I made this for guests they said it was the best chicken and rice they ever had.

I love this recipe!! Growing up my mom made it all the time. I make the rice and chicken separately, and mix the creme of chicken or mushroom with the rice. When the chicken is half way done, I pour 3/4 of the juice out (keep it to the side just in case) and the remaining 1/4 I add it with the rice. Lay the rice in the bottom of the pan, add the chicken on top and continue baking until done.

I had this dish when I was a young girl. My aunt made it, she did made the rice on the side separate from the chicken. Same with the cream of chicken on the chicken after it was browned in the oven. Quick easy dish, thanks for reminding me of this recipe. I loved it then and I know I will love it now. Especially, since my aunt died last May. I'm going to use cream of celery and your idea with the chicken broth. But, I plan on boiling my chicken and then brown it and cream applied after with onions and peppers to spice it up. I'm going to boil the rice on the side with some bay leaves.. A nice green vegetable on the side. Thanks that was truly a throwback.

White rice has been hulled and bleached which removes the vitamins so manufacturers enrich the rice by adding vitamins along with starch to help the vitamins cling to the rice. In the old days people had to wash rice to remove bugs and mites which were a problem caused by long periods of storage and shipping. Now people wash rice to remove the starch (makes rice more starchy/sticky) but they also remove the vitamins and end up with a carb that has no nutritional value. It's a cultural thing in Hawaii as most do it because they were raised that way and believe the rice needs cleaning. I still wash mine even though I know I shouldn't LOL

Your done. Oven rice takes more water than stove rice. I use carrot shredded. Never liked peas. Either way it's just for color to the dish, mommy says.
