for the unit circles why in the third quadrant its the reference angle minus 180 but further along in the video you did 180 plus referance angle?

Both of these scenarios are slightly different. Let x be the full angle and A be the reference Angle. In the 3rd quadrant x = 180 + A and then this can be rewritten as A = x - 180. Its the same formula, just rearranged.
