This is one of my meals in a jar. These are great to have on hand when you are in a rush, emergency preparedness or just don't feel like cooking. So let me show you how I make and can bourbon chicken!
3 1/2 - 4 lbs. boneless chicken breast or thighs, cut into bite size pieces
1/2 c. apple juice
2/3 c. low sodium soy sauce
1/3 c. ketchup
2 T. apple cider vinegar
3/4 - 1 c. chicken stock
1/4 c. bourbon (optional)
1/2 c. brown sugar, packed
1 t. red pepper flakes
3/4 - 1 t. ground ginger
1 t. each of onion powder and garlic powder

Thank you for advising me not to use the Clear Jell. So many others are using it in their recipe. Very clear instructions and free from all the chit-chat.

Thanks I appreciate your comments. I am trying to improve as I learn and get rid of too much chit chat. I personally prefer videos that move faster. I would say my earlier videos have more lol. 🙂

You got me wondering if one of my favorite southwest dishes native to Tucson AZ could be canned? This is how I make it in the crockpot: in crockpot combine 3-4 lbs pork roast, 1 lb dried pinto beans, 4 Oz can chopped green chilies, 2 Tblsp chili powder, cumin to taste, dried oregano to taste and 1quart water. Cook on low for 6 hrs then shred meat removing any bones or fat, serve over corn chips and top with cheese, onions, sour cream and salsa.

Oops it’s called chalupa! Not at all like chalupa at Taco Bell but an authentic Arizona recipe.

​@@jcrickets When I look at the list of ingredients, they all look safe or canning. However I can't find a recipe in ay of the scientifically approved resources. Alot of the sae recipes have to do with proportions of low acid and high acids. Too bad because it looks delicious. I feel that there are alot of great recipes that could be canned but they just haven't been studied for safety. I wish there were alot more studies done on safe recipes.

How much water do you put in a pressure canner that size,please?. I use an electric canner and it takes 8 cups water.,thanks.

Hi. Inside these pressure canners you have a water measure- a fill line. You put your water to the lowest level. My manual says 3 quarts (which is 12 cups) but each canner is different. Mine is a 23 quart canner from presto

Hi. The steam canner uses very little water compared to the traditional water bath canner. Its light weight and heats up fast. It uses 2.5 quarts (10 cups) in the bottom. Hi. I thought you meant the steam canner and realized you meant the pressure canner. Sorry. In the pressure canner you add 3 quarts of water. It doesn’t need much. Sorry about the confusion.
