Hey! You can eat it anywhere up to around 12 weeks old and it also freezes well. Once opened, keep it in the fridge in an airtight container to stop it drying out before you finish it. 😊

Personally I love Baron Bigod when it’s that mature it developed into a mobile life form. The big cheese wheel is great for this. My husband calls the perfect texture as ‘runny flumped’.

@@sadieross-johnson2800 My local cheesemonger has all cheeses labelled pasteurised or unpasteurised. I was heartbroken to see bigod as pasteurised and asked about it, was told they can't get the test equipment.
