2:05 after you finished the foundation chain did you turn your work before starting the single crochets of row one? I see that step on the written pattern but in the video it was unclear to me. Thanks again for this pattern. I’m looking forward to completing it.

yes, you turn your work after every row.

If I were to make this into an adult sized blanket, how many stitches do you think I would need instead of just 62? Thanks for the tutorial!

It's approx. 2 stitch per inch. so do get 40 in you would need 80 stitches. 60 in: 120 stitches.
