You guys looked like you had so much fun. Just a correction, the egg is not raw, it is fully cooked by the sugar syrup and then again in the oven. The short date they are good is because they get soggy. You can freeze your macaron and then defrost as needed.

They’re making French macarons. They’re using the Italian method for the meringue. It’s still a French macaron.

Sarah Silva you would just call it an italian style macaron, then, rather than a french macaron. Calling it a french macaron, despite the cookies origin in France (purportedly by an italian baker), implies the use of the french meringue.

I have made macarons using the French method and Italian method. My preference is Italian because I find the meringue to be more stable. I have been practicing making shells so I can perfect my macaron game! If the world wasn’t as messed up as it is, I would have signed up for the course and hopped on a flight to Paris

You can keep macarons for up to 3 days refrigerated, you bake them so there’s no raw egg in there lol

At around 3:20, the chef mentioned that almost all the chefs she worked with in Paris are making Italian way. This method is indeed Italian method ;-).

Jannis Tan with the French method, you don’t use the boiling sugar syrup, but just add sugar in its granulated form to make the meringue. Because of this, the French method produces much lighter cookies that are actually more unstable and prone to spread. The Italian meringue has a lot more structure, so it is the preferred method for most bakers. The French method also does not add egg whites separately to the TPT mixture.
