It might be a sulfite allergy. Some wines I drink have me turning red as a lobster.

@nikkibudgirl yes we thought of that too but she's had plenty of other reds with sulfites that didn't bother her the same way. I guess it's possible the levels were much higher in that particular mulled wine.
