This recipe looks amazing I can’t wait to try it! I’ve been doing so much baking lately. Two tips from a professional baker if I may...choke up on your knife handle so your thumb and forefinger are at the base of the blade, makes for much easier slicing and bake with parchment paper instead of foil, may take a little longer to prep your dish but it’s non toxic and works the same if not better. I second the knife holding technique!! I just recently learned how to properly hold it (from Babish!) and am still trying to make it a muscle memory thing, but it absolutely helps!!

I know at least one other person asked, but we need to see how you make your caramel sauce!! I just made it a few days ago for the first time ever and it came out *perfect*. Then I made more 2 days later (I used it all in coffee haha!) and it came out AWFUL and chunky (it still tasted delicious and I did still use it but it was chunky in my coffee haha). I did the exact same thing and I can't figure out what went wrong the second time. Your caramel looks professional!! Teach us, oh wise one!! 😊💙

there are lots of great youtube videos about knife skills but the rocking technique with a knife isn't actually a wrist motion, your wrist should stay relatively still/straight while your shoulder/elbow do the work. tip of the knife stays on the board and you rock the knife forward and back using the other hand to feed the thing you're chopping into the knife. hold the knife with the blade between your thumb and forefinger (like if you were pinching it - index finger bent and thumb pressed into the side of your knuckle!), so no putting your index finger on top of the knife's blade and pushing down. weight of the knife puts all the pressure you need when you're rocking the knife, you're just holding it steady. anywayyy, gonna make these bars this weekend!

Everytime you do a baking video you're like, "I make my own brown sugar" and "I make my own vanilla paste" HOW? I tried making brown sugar yesterday and I used this brand of grandma's molasses from Walmart..... honey it did not smell like brown sugar. It almost smelled savory. Am I missing something? And I know how to make vanilla extract but not paste!!! Teach me your ways!!!
