Recipe:
1 leg of lamb 2.5 kg
3 tbsp yogurt
2 tbsp mustard
Ground 1 tbsp sweet paprika
1/2 teaspoon thyme
1/2 teaspoon rosemary
1/2 teaspoon pepper
2 tablespoons oil
Half a lemon
Parchment paper
Aluminum foil
(For the oven the preparation is the same "with lower heat for 2.5 to 3 hours at 220 degrees)
We take a bowl and put in yogurt, mustard half a lemon and we add the above spices and mix them together. Slightly cut into the meat and marinate with the garlic powder and marinade, cut the potatoes and carrots into large cubes and distribute them on the baking paper, place the meat on top and wrap them well with the baking paper including the aluminum foil.
Budeln a 70 cm deep hole in the ground and the bricks, if not available, you can take the stones that I have used, distribute them nicely in the hole, put the branches in it and light it with a lighter, pour charcoal into it and wait until the desired temperature is reached, then we put it on the left and on the right side a stone in each and the slatted frame on top.
On top we put the meat and cover the whole thing with a tray with large stones or something similar so that it is air tight.
Our meat is ready to serve after 5 to 6 hours "enjoy your meal
