Great to see, that chicken looks like local chicken. Last visit was last year to Trinidad, was shocked how many places using the frozen, imported (rotten) chicken. From the Chinese restaurants, to the food courts, to the BBQ at the side of the road, was really depressing how our great cuisine was being laid low to cut costs. That frozen chicken is literally full of hormones, hence the big size, often black inside and would have been butchered at a minimum a year by the time it being cooked. Keep up the good work this place, keep it local.
