Lemon Blueberry Bundt Cake
1 Cake Mix (15.25 oz.) white or yellow
1 box Lemon Instant Pudding Mix (3.4 oz)
1/2 cup Sour Cream
4 Lg. Eggs
1/4 cup cooking Oil
1/2-3/4 cup Buttermilk
1 Tbsp. Lemon Zest
2 cups fresh or frozen Blueberries (if fresh, rinse with cool water
2 Tbsp. Flour
Glaze: 1 1/2 cup Powdered Sugar
2 1/2-3 Tbsp. Fresh lemon juice
1 Tbsp. Lemon Zest
1. Do not preheat oven, this starts in a cold oven!
2. Toss blueberries with 2 Tbsp. Flour & set aside
3. Thoroughly grease & flour or spray a 12 cup Bundt pan
4. In a mixing bowl combine the cake mix, pudding mix, eggs, sour cream, oil & buttermilk. Mixture will be thick
5. Mix in lemon zest
6. Gently fold in the blueberries
7. Pour into prepared Bundt pan and spread evenly.
8. Place in middle of oven and set oven for 325 degrees. Bake 65-70 minutes, or until toothpick inserted in center comes out clean.
9. Remove and cool in pan on a wire rack for 10-15 minutes
10. Invert onto wire rack to cool completely.
11. Mix powdered sugar, lemon juice & zest with a whisk until smooth
12. Drizzle glaze over cake.
