Lemon Blueberry Cake
Ingredients :
Maida 200 gm
Condensed milk 150 gm
Butter 120 gm
Curd 130 gm
Milk 50 gm
Powder Sugar 50 gm
Baking soda 1/2 + 1/4 TSP
Lemon juice 2 Tsp
Lemon essence 1/2 TSP
Lemon Zest - 2 lemons( grated outside part of lemon)
Blueberry Filling(compote) or dry blueberries as require.(you will get this in Bakery shop)
Method:
Sieve Maida & Baking Soda.
In another bowl, take condensed milk and butter. Whisk with electric or hand beater for 2 min.Now add powder sugar and curd. Whisk it.
Add lemon juice, lemon essence and lemon zest.
Add sieved maida and baking soda. Now add milk and mix with spatula or hand whisk by cut & fold method.Battet is ready.
Pour the batter in any type of tin. I have used bundt cake tin here.First pour half batter . Add 2 TSP Blueberry Filling /sauce (compote)or you can add dry blueberries . Spread it. Again pour remaining cake batter and mix it slightly. Now cake batter ready for baking.
Preheat the oven at 170°c and bake the cake for 40 to 45 min.
