Dharwad Pedha
Ingredients :
Paneer 300 gm
Ghee 3 tbsp
Sugar 130 gm
Mawa 100 gm
Milk 60 gm
Cardamom Powder 1 tsp
Bura /castor sugar for coating
Method :
In a pan add 1 tbsp ghee. Add grated paneer. and roast it. Roast for 5 min and add 130 gm sugar. Roast it again for 10 to 15 min at medium flame.
Add 1 tbsp milk and roast till it colour turns in golden brown. Add again 1 tbsp milk. Roast till it becomes dry. Don't over dry the paneer mixture . Switch off the gas.
Now grind this roasted paneer into paste by adding 2 to 3 tbsp milk.
In other pan add 1 Tsp ghee and add 100 gm Mawa. Roast it and add above paneer paste and cardamom powder . Roast till, it leaves the sides of the pan. Don't over roast., otherwise pedha mixture will become hard.
Now make immediately the pedhas of round or oval shape, when mixture is warm. Roll this pedhas in bura sugar or castor sugar.
