Lemon Blueberry Stuffed French Toast | King's Hawaiian

Ingredients:
-King’s Hawaiian Original Hawaiian Sweet Rolls
-1 c blueberries
-3/4 tsp vanilla
-1/2 tbsp lemon juice
-1 tbsp sugar
-1/2 tbsp water mixed with ½ tsp corn starch (combined)
-1/2 c milk
-2 eggs
-1 tbsp cinnamon
Ingredients for lemon cream cheese:
-8 oz cream cheese
-2 tbsp powdered sugar
-Zest of 1 lemon
-1 tsp vanilla
Preparation:
1. Mix together cream cheese, powdered sugar, lemon zest, and vanilla, then set aside
2. In a small saucepan mix together blueberries, sugar, vanilla, and lemon juice (over medium heat), then add water mixed with corn starch to thicken the blueberry sauce and let simmer for a few minutes, then remove from heat
3. Hollow out the sides of King’s Hawaiian Original Hawaiian Sweet Rolls, then fill rolls with blueberry sauce, and lemon cream cheese
4. To make French toast, mix together eggs, milk, and cinnamon and dip the rolls in the mixture, then fry until golden brown
5. Finish by dusting rolls with powdered sugar (optional)
