So I just made this, I mixed my ingredients in the blender instead of by hand before putting in jars and no lumps!!!! Can't wait to try in morning thank you!

Oh my! This is a game changer! Like some others, I premixed the ingredients in a mixer and then poured into 2 pint jars for cooking. I pooled them and the curd is now sitting on the counter in its lemony and buttery smooth glory!! Thank you, thank you! I’m going to mix it into whip cream and serve with gingerbread for Thanksgiving.

Omg... I just tried this recipe today & it was amazing!!! didn't notice any lumps after I stirred it for a bit. Going to attempt the German pancakes in the morning for the fam. I've never had them, but they look amazing! 😋

I used Mary Brecht recipe and pulsed sugar and butter in my Ninja then pulsed the rest 2 pint jars 3/4 full. Did not separate or lump stirred anyway but was perfect. Thanks for the lead.

I just made this in my IP today and OMG it's delicious. I used your recipe and it came out great. I didn't notice any lumps after stirring but I used sugar not sugar substitute so not sure if that would make a difference. It really was super easy. Thank you for sharing!

Dave Courington I used 5 tablespoons. 1/4 cup sugar equals 1TBSP plus 2tsp Stevia.

I made this and cooked in IP in 8 oz jars (3) I used TOG this old gal recipe on Pinterest. The lemon curd did not separate to the extent your did and there were no lumps. Don't know if the difference was trying to cook it all in a larger jar? But I noticed in your pudding recipe that you have small jars. I cooked in these but poured them in a larger jar to store. Hope this is helpful.

+naseerahvj I do! My third is named Charity Ruth and from birth we called her Ruthie. When she turned 4 she decided she wanted to go by Charity. That was an adjustment! Ruth is also my sister's and my mother in law's middle name as well as my great aunt's name. We love it!

No worries about Mason jars! They are designed for pressure canning which is done at a higher PSI than the IP even reaches. 🙂

Indigo Nili Yes. I think I figured this out. I had whipped it in the Vitamix first, and forgot that I needed to allow for some head space!
