Holy moley, Nili! This is easy peasy, and so, so good! Just made my first batch and can hardly wait till after supper tonight when we will have it over some ff Greek yogurt mixed with some chia seeds and a few blueberries! I have thoroughly enjoyed your THM videos, and your GGMS concentrate is always, always in my fridge. Congratulations on your precious new baby girl!

I made your lemon curd, and it was amazing! I also loved your idea of pairing lemon curd with blueberries and put it together in a pull apart bread/pastry topped with Bake Believe” sugar-free white chocolate. wish I could send you a picture of how good it looks… Tomorrow will be the taste test from the family. Hi Nili, I've never even heard of Lemon Curd!!... I viewed both videos (the other with the one pot) That is out of my price range so I will look forward to trying this recipe out. I'm assuming you can only use it with an S pancake or waffle and not an E one. In any case, it looks yummy and I will try to make it and let you know the results!.. Thank you for your videos... I really appreciate them!

Nili, I love lemon curd, But, how do I keep it from crystalizing once put in the fridge?? I can't eat it after it's been in there it is disgusting with the sugar crytalizing. I even used powdered swerve the last time to try and avoid this. Both, a granular monk fruit/erithritol, and second time I made it, the powdered swerve and both ways seemed to have crystalized when cold.

Yum! Looks good :) I've read bad things about erythritol lately and even stevia.....it seems like anything sweet it bad even though its low carb :(

motivated2shrink Yeah, I've read the negative stuff too and avoided all sweeteners for a long time because of it. But the more research I did the more I realized that the benefits (for me personally) outweigh the possible negatives. Adding them back in has only had positive effects for me (keeping my weight and cravings under control and allowing me to enjoy food even more) so I've decided to go with what makes me feel happy and healthy. If I notice any negative effects in the future I will give them up again for sure. :)

+N Fischer Lol! No... There's 1/2 of a cup of butter in there. Probably not a good idea to eat it all in one sitting! Although it might be tempting! Lemon curd is a topping that you can use kind of like you would use jam.
