I've been watching your videos for about 2 years now. I always get exited when you upload something new... And always looking forward watching what you make. That being said: I love the way you edit, the way you shoot. It is something unique to you and I appreciate it a lot. Just made this with chia seed, fresh blueberries and 100g brown sugar. So moist and good!! Oh I also used half pastry flour and half white whole wheat flour as those are what I have on hand. Might try the healthy w/o sugar version next time :p

I think it would be interesting for you to do a video in Japanese why you went vegan because if the Western world I think people talk more openly about those kind of stuff but in Japan where it is not well seen to be "different" you could spread this wonderful message ! Love from Monaco :3

thanks so much for the second recipe.It's easier to find the ingredients because apple sauce is not popular in my place. And one question is if it's so hard to get the poppy seed , what seed can I replace? Can it be black sesame or chia ?

I don't know if I'm the only one having this problem, but I've attempted this recipe 3 times now and each time I cannot get the muffins to really rise while baking. They never seem to rise above the edge of the pan, stay somewhat wet on the inside, and don't appear to brown at all. I've triple checked the recipe and watched the video multiple times to make sure I'm doing everything correctly. If anyone has any advice I'd appreciate it!

fallingtomydoom i experienced the similar thing! Tried 2 times...my cake never rise as much as the one in this video. Should i add aquafaba? Also, At 30mins at 180 degree, i check with a skewer it was wet so i tried to leave it for another 10mins and i checked again the skewer is still wet at the bottom of the cake. When i take it out and leave to cool for another 30min, the top was hard and the base is overly moist. Are all vegan cake moist than traditional cake?

Really stupid question (I know you said you looked over the recipe multiple times) but are you sure you used baking powder and not baking soda? It makes a big difference sometimes.

Goose II Actually, even if she used baking soda it should have worked because the acid in the lemons would activate the baking soda and give rise to the muffins. Maybe the error is in the recipe. Maybe it should be baking soda instead of powder.

Can coconut milk be replaced by soy or almond milk?

What julai said, or if you want, you can use almond milk and put some almond/cashew or other nut oil to give similar richness, but coconut milk is the best option here.

1 other option would be that you use a blender to blend cashew nuts with small amount of water so it becomes a creamy paste.
