Believe it or not, I started cooking and baking because it made me feel close to my mom who was an excellent cook!!!🥰 I have so many sweet childhood memories about her in the kitchen cooking, and she would fix breakfast every Saturday morning. She passed away unexpectedly in March of 2016. I made this the other night! Delicious and super moist. Tasted even better the next day. I only had 2% milk on hand, so I added 2 Tbsp veg oil to make up for the missing fat content. This cake didn't rise as tall b/c of the oil, although it's not much, but I don't look for that anymore. It's just not a big deal to me. But baby----this is a keeper! Instead of the paddle attachment, I used my wire whisk instead to incorporate more air and followed the recipe exactly from there. I plan to use a paddle next time to see if that makes any difference in texture and height. Thank you Ms Donna! This was awesome!
