Lengua Estofado or lengua is a special dish often served on special occasions such as fiesta, birthdays, weddings, and holidays. This dish is usually served only on special occasion as the tongue meat is pricey and takes time to tenderize. The tongue must be boiled for at least 3 hours on the stovetop or 45 minutes on pressure cooker or until tender. Lengua is often slow-cooked in thick red sauce with red wine or creamy mushroom gravy. Lengua Estofado is a delicious tongue dish that melts in the mouth and even better to eat than regular cut beef.
