You’re on Vancouver Island? I’m Canadian too. I live in Langley. Ive been vegan for 12 years now. I love it and especially that animals don’t have to die so I can eat. I’ve decided to switch from Rice to Quinoa as I’m hearing more and more about the arsenic in rice. If you have some quick tasty Quinoa recipes that would be great. 👍😊

Oh you're so close! I was just on the mainland yesterday for some work. I agree, there are many perks to being vegan and that is a huge one 🐮🐷🐣! They all look so beautiful and delicious, can't wait. Great job on your video. Looking forward to watching more and visiting your blog. Please, please, please come up with a Red Velvet Cake. That was our family's favorite cake at Christmas. A couple of members of my family and I also have become highly sensitive to gluten and we can no longer have our beloved Red Velvet Cake. And I’m sorry to hear you’re missing your favourite cake. That’s a great suggestion for something I can start working on (Bryan loves red velvet too)! In the meantime though, my sister does a lot of gluten-free baking and loves the blogger “the loopy whisk”. I quickly looked and they don’t have a red velvet cake but they have lots of great vegan and gf recipes so you can check them out too!

I too found you after your wonderfully interview on PBwithJ. It really grabbed my attention. Since you asked what I fancy or have been challenged as a vegan to make ... a wonderfully, rich, creamy, coconut flavored curry sauce. Love the taste of coconut in anything but have to avoid it due to the saturated fat content and my elevated LDL. Alas coconut custard pie has been a thing of the past for many, many years.

Thank you so much for saying hi and I really hope you enjoy our videos ❤️ I’ve been trying to think about ways to get that coconut flavour while limiting the saturated fat. I too limit the coconut products we have but we do use coconut milk here and there. I’m wondering if you could use coconut water (which is much lower in saturated fat… I happen to have a carton of it right now and it says 0g in a 375ml serving)? If it’s possible for you to use that you might be able to mix it with blended soft tofu or another plant milk to make a creamy sauce for a curry? Let me know if you’ve tried something like that or if it’s best for you to stay clear of coconut water too.

Ah yes those are on my list! I’m in love with a recipe for shrimp rissoles that I’ve created and I think the croquettes are even simpler because they don’t have a dough so I’ll get working on those! Bryan really wants to go to Flores and I’ve never been to any islands other than Sao Miguel where my grandparents are from so we’ll have to put Flores on our list for our next trip. Oh cool! I wouldn’t have tried freezing it so thanks for mentioning that! I actually haven’t covered freezing tofu at all on our channel but it’s a great way to preserve any blocks you buy and aren’t getting to in time. It’s shocking that it can actually improve the texture of it and make it so useful for mimicking eggs (or chicken with the firmer varieties) 👍🏼

I’m just starting to get to know your channel. And I must say the greatest pleasure I get out of it is getting to witness your kindness, your love for each other, your enthusiasm and genuine pleasure in making plant-based recipes assessable to all. So excited to try some of these top recipes, although as a longtime plant-based eater, the ones inspired by meat are not appealing to me.(BUT LOVE that you are inspriring others to know they can still have their favorite foods with this eating style.) But I’ll try and keep an open mind. I’ve never had a lobster roll, but that tofu mayo with hearts of Palm sounds like something I would really enjoy. I’m not always able to comment, but I must say you’re easy. Vegan Caesar dressing is one of my favorite no oil dressing recipes I found yet I’ve always been more of a light vinaigrette type salad dressing person, and most of the oil free dressings are I’ve found here are cashew based, thick and heavy and sweet. I make yours without the hummus And use aquafaba instead and it’s the closest to a traditional oil based dressing consistency that I found with tons of flavor with and first time I felt “fooled” by nutritional yeast as a cheese sub. As somebody of Canadien descent myself, I have to ask -- can your Shepherd's Pie with lentils be modified into a Pate Chinois with lentils? :-) Pate Chinois is such a comfort food, for my family! Would love to see a flavourful vegan spin on it, if you think there's one!

Oh interesting! I actually hadn’t heard of pate chinois. I think you could definitely modify how you typically make it by just substituting lentils and maybe mushrooms for the ground beef. It could be done with all lentils but mushrooms might provide a bit of extra savoury flavour. I would try something similar to my recipe but take out the carrots & celery obviously and maybe take out the tomato paste (just onion, garlic, soy sauce, and Worcestershire sauce would probably get you to a similar flavour). I have found a few veggie recipes online for it and I definitely think you could do it! Let me know if you give it a try and I’ll have to try it too.

Normally, there is a layer of creamed corn in between the ground beef and the mashed potatoes, but I wasn't sure if you would switch that for chickpeas or non-creamed corn as well as swapping out the ground beef for lentils. But I'd love to see what a more savoury flavour might accomplish! :-) Thank you so much!

Oh ya I think keeping the creamed corn is great! I haven’t used it much but I think sometimes it’s dairy-free? If there is dairy to actually make it creamier I would think you could make a bit of a roux with soy milk or even coconut coconut milk to make the corn creamier. Similar to how you could use non-dairy butter and plant milk in the mashed potatoes! I wouldn’t want to lose the sweetness from the corn to contrast the “beef” layer. Chickpeas might not give you as much of the flavour you love from the traditional 😊

@@TastyThriftyTimely I've got almond milk in my fridge, but I don't know if it's the sort you'd use for cooking -- and it might not be the right sort of sweetness? I would adore something like a nice spice to put on the "meat" layer, though. 🙂If I can put something together, and it turns out lovely, would you want me to send the recipe on to you? Obviously, it'd be trial and error -- I'm afraid I don't have your kitchen! But I do have another cousin who's vegan, and they might really like this, too.

If the almond milk is vanilla flavoured or meant for using in coffee the sweetness won’t be quite right. If its an unsweetened almond milk though or even “original” flavoured then that should be fine to use! Some of the spices I like using on lentils to make them more “meaty” tasting are smoked paprika and a bit of cumin. Soy sauce (or tamari) and Worcestershire sauce are good options for adding some savoury flavour. But yes if you experiment with it and get close to the flavour you like from the original you can certainly send me what you tried. What do you use for vegan butter? Also, does powdered monk fruit or allulose work the same as powdered sugar?

I’ve used a few different brands of vegan butter and for everyday I like the “melt buttery spread” and “earths balance”. I will often buy the lower cost options like “becel plant based” and the presidents choice brand we have in Canada. For baking though I suggest getting vegan butter sticks vs a butter spread in a container. Earth balance sticks are what I tend to use. Miyokos is a higher priced brand that people love but earth balance has worked well for me. And I’ve never used either of those sweeteners but on a quick look it seems like they will work in place of icing sugar! You may need 1 1/3 cup allulose per cup of powdered sugar in order to achieve the same result for icing but those seem like great options!
