Hello Casey :) This was a simple throw together chili recipe and I enjoyed seeing it and will definitely try this one this winter. Thank you for the idea you provided with the lentils as a meat substitute for those vegetarians and also for those that are not vegetarians but cant afford too much meat at this time. I keep lentils in my pantry to use in place of meat for certain recipes to make my meat stretch.

Interesting Stew. I make a taco "meat" that is all lentils. I was so skeptical, but it was wonderful. It has the texture of meat. Basically onion, garlic and all the Mexican food spices. I need to make that again. Will try your chili to add to my lentil ideas.
