Les, I have been smoking ox-tail on the pit since 92. When you could buy a case for 25.00. I smoke the ox-tails until that candy red color and then wrap them in foil for about an hour. Tender ox-tails.

Black Diamond ox-tails at Destinations in southern Cali only smoke em! No braised needed. And they look way more tender than these. Black Diamonds look like ox tail brisket

Ox tails was my Pops (grandpa) favorite meal. I am from the mountains of TN and my Pop owned a pest control in DC and Baltimore. One of my favorite memories of Pop was him introducing me to oxtail! Thanks brother!

YES!! You absolutely have to braise those oxtails to get ‘em nice and tender like that! Beautiful Job that you do day in and day out! Hard work and dedication 💪🏾 Edit: The oxtail has a lot of cartilage and connective tissue, so it needs to be cooked low and slow for a long time using “moist heat”. One such method is braising, which melts away all those sinewy bits and turns them into gelatin, yielding flavorful meat and a very rich and delicious sauce.

Im from Texas. I smoke them and keep them candy red while spraying apple juice until they get a nice dark mahogany color. Then I put them in a food tray and cover them with aluminum foil and they fall off the bone. Candy candy 🍬

You can get them tender on the grill, it just takes a long time. I just run them in the oven after taking it off the grill to tenderize them quicker

you do not have to submerge them in all of that broth. Put them in a pan with a little broth and cover it with foil. The steam from the little liquid will help them tender. If you like boiling the seasoning off the meat then go for it.

That's not true meat absorbs like a sponge, the way he's doing is the traditional Jamaican way and their oxtails don't lack seasoning.

@bigred200222 no he smokes them to a eatable temp and finishes them by braising. I think what he's talking about not breaking down is the fat, the method your talking about he does that way also. When your making 1,000s it's just faster to do it that way. Like it's another guy on KZbin that only smokes them but I bet it's taking 2x the time to make them, there are many methods.

I'm sure they still taste good but the bark on the out side of the oxtail is gone when you boil it ,braising would help retain it . Same thing happens for brisket when they wrap it up

I know Les know his oxtails and they look magnificent but I also watch Walt over in California da Southern part and he smokes his on the pit all the way through it just takes way more time , they both are the Kings of Oxtails the way they do them but I also learned that Age and experience can never be discounted nor over looked!!! Ofcourse the fat add volume, but the real reason they’re big cause he uses and demonstrates the base oxtails, not the tip of the tail bones. The tips are smaller and to me more delicious. And just like y’all, we’ve ALWAYS cut off the fat.

I cook them for 4 hours at 150 degrees Celsius (300 degrees farenheit) in a casserole. Love em.

No! If you want oven cooked ribs, cook them in the oven but if you want good smoked ribs, you gotta slow cook them on the grill with wood.

205° internal is the only thing that matters for tenderness. Slower can add more flavor but it doesn’t matter dry, braised, roasted, smoked

He’s right that’s how my grandmother taught me as well. Season them and the water boil them for a few then bake them for a few and put bbq sauce on them and throw them back in the oven for a few.

Slow Coker and I'm done with that. And they come out nice and tender I love it. That's why when I eat oxtails that's I put them in a slow cooker.

I just smoke mine for a few hours then wrap like any other meat. Sooo good, never have boiled like that, but to each their own.

I had oxtail once. Very good. Reminded me of roast, it wasn't smoked, but I bet they good smoked too. I want to try beef tongue.. I was told how to cook it, I just haven't tried it yet.

This might be a dumb question , but does it “wash” the smoke flavor off by braising ? Can you braise first then smoke ?

Yep I watched my daddy do it long enough to now. Pop boil first so make that meat tender. Okay and personally I don’t eat oxtails, but I will eat the rice.😊😊😊❤❤❤
