I personally prefer chefs who aren't obsessive about weights and measures. Handy to have a recipe, but amateur cooking (the audience including myself) is about proportions, personal taste and eyeballing, not precise measurements- if you're good enough at it (as he seems to be), it becomes an art.

I've never experienced frog legs, but have heard similar things to crocodile & alligator, but I enjoyed those. I think region and how the food is prepared matters too. XD) , so they could later prepare, cook and eat it, which was very interesting to me.
