A sweet taste of Hawaii. Make your own homemade pineapple glazed holiday ham. A perfect meal for the holidays or for any occasion or even for just an ordinary day. It is easy to make at home any time. This recipe has been with our family for decades and I am pleased to share it with you. Get creative and add your own twist to the recipe; Used honey, maple syrup, orange peel or lemons to flavor the meat and the glazing. Fill your kitchen with the sweet, delicious aroma of freshly baked pineapple glazed holiday ham. A special addition to your holiday fare!
Ingredients, pickling solution: good for 15 to 20 lbs of pork leg
4 cups brown sugar
1.5 cups sea or kosher salt
4 bay leaves
10 drops oil of anise
10 drops oil of cloves
2 tsps ground cinnamon
1 tsp ground cloves
2 tsps pink powder (adjust when using pure salitre or sodium nitrate; pink powder is 6.5% sodium nitrate, 93.5% salt)
1 to 2 cups Chinese cooking wine; the higher the alcohol content, the better
4 quarts water
Bring to a boil. Stirring occasionally. Allow to cool. Add the Chinese cooking wine. Make enough solution to cover the ham during the curing period. Turn over every 4 days.
You will need:
A meat syringe and needle for injecting the solution into the meat
Plastic bag or tub w lid to keep the leg in solution during the curing period.
If you do not have the syringe, simply soak the leg in the solution for 20 to 30 days; prick the meat with a sharp pointed knife. After pumping the solution into the meat, massage the ham to disperse the solution.
Cooking/boiling ingredients:
1.36 liter can pineapple juice
2 liters beer
5 cups brown sugar
1 tsp whole cloves
4 bay leaves
1 tsp anise
1 tsp ground cloves
1 cinnamon bark or 1 tsp ground cinnamon
1 cup Chinese cooking wine, optional
1 cup salt, optional
Pineapple glazing:
1 can crushed pineapple, drain liquid or 1 cup fresh pineapple finely chopped
2 cups brown sugar
1 tsp ground cloves
1 tsp ground cinnamon
½ cup grated orange peel, optional
Mix all ingredients into a paste and spread over the ham Sprinkle brown sugar of the top to cover.
