The reason for the boil in water is to get the skin soft, so it will puff when fried. Cracklings are hard when fried directly in lard, and sometimes bittery when oil is too hot....so the ones in the pack was fried in lard, same as you would make any crackling, but it was boiled first.....thats why the skin puffs so much

@@TheCrawlspaceCraftsman boil for 20min and if the skin doesnt look swolen, boil it more for another 10 min

@@TheCrawlspaceCraftsman and if you want the whole crackling to puff up....(this is not making bubbly skin) you need to boil it for 40min, sit it out on a baking sheet in the sun for 3 days untill its hard...go see once a day which ones to turn if they lie on top of one another....just scramble it to rotate.....then after the pork skin is hard....it will be ready to deep fry.Oil should be as hot as you use it for deep frying chips. It will float to the surface once its fried. Carefull....the whole thing puffs up like its full of air.....

SOUTH AFRICAN WAY OF MAKING PORK CRACKLINGS. 1. CUT FAT IN 1/4 INCH CUBES 2. BOIL IN WATER FOR 20MIN 3. WATER WILL BOIL AWAY, AND LEAVE IT TO START FRYING PROCESS. 4 ONCE GOLDEN BROWN AND FRIED OUT, DRESS WITH BBQ Spice. use fried out fat to fry eggs, line oven pans, on toast with pepper

Certainly enjoyed this video. Actually the prior pork rinds video as well. But the key to frying or baking pork rinds the southern way. You must wash all of the salt off of them in running water. To remove all of that salt off. Then place the salt pork into a pot of cold water. Boil for ten minutes. Drain that salty water off. And use a strainer to rinse your pork rinds again. Then you're ready to place in air fryer. Or in a pan in a single layer to bake in the oven. Watch them carefully so you don't burn them. Enjoy 😋

Cracklings have fat still attached. Rinds are just fried out skin. You bought rinds you made cracklings. Lots of companies name them wrong.

Is your air fryer coated with Teflon? Is there such a thing as an air fryer without Teflon? That's the only thing that's holding me back from getting one. 😟
