was in the USA a few weeks ago and could not get enough of these things. Came back to Switzerland my home and ...of course...no pork cracklings here. Tried to make them my self: Frying always not hot enough oil and too much absorbed oil. Baking in oven still saturated in oil and not hot enough in the oven. Also frying and baking in the kitchen....stunk my kitchen are so bad it was unbearable. Today I purchased a Philipps XL Air Fryer and tried your method: PERFECTION. Thank you very much. I cook in the air fryer outside. My kitchen is odor free......

Air Fryers are great. companies need to start putting air fryer instructions on food packaging instead of just over and microwave and regular frying

One thing that you can also consider for the air fryer are accessories, from first and 3rd parties. I bought a set of stuff for mine. Among them a grill that gives me the chance to make food in two stories at the same time. The grill also came with skewers so I could do stuff like that, too.

I worked on a huge farm and each year we would kill and butcher about 8 hogs for the owners and they would always give me these huge slabs of what they called middling meat .my Granny would slice it into squars and dust it with flour and black pepper then fry it up real chrispy and put it on a big Homemade biscuit,and it was great.makes my mouth water just telling you about it.and some big fresh Hog liver fryed with onions was killer also.

I don't have one of these mate. Crackle looked great. I do mine in the oven, 200*c on a wire rack over a tray, score and cut to size, chuck her in for 30 mins, sorted.

Can I ask though why don’t you just cut up the fat into the sized pieces that you want from the start instead of cooking it in one piece then cutting it all up? Can I cut it all up from the start and cook it like that or would that make a difference in the way it cooks at all?!! Next time you might want to boil them for about 20 Mins, then scrape the fat off of them, then stick them in a dehydrator for about two days before you air fry them :)
