In Greece we call it Freddo Cappuccino. You have to whisk cold (as cold as possible) low fat milk with a mixer or a hand mixer to get the perfect foamy, creamy texture.

Whisk low fat milk and pour it on top as a creamy layer. In Greece this is called "Fredo Cappuccino"

Very nice. I use an electronic milk frother but I haven't gotten the hang of it yet, the foam gets too dry. Need to play more with duration and wand positioning I think.

Milk texturing is tough. I have it down really well on my Mini but I’m now struggling to get the hang of the GS3 so just stick with it and you’ll get consistent.

@@Sprometheus I notice that there's a somewhat different workflow between using a regular steam wand and a milk frother. Guess I have the whole summer to practice making iced cappuccinos. Also machines have varying degree of steam power I guess (unless it's something else like ergonomics etc) so good luck with that.

No, when you foam it, the foam has a different density from the milk. The reason he had the spoon was if any of the foam came out in his first pour, it would be caught in the spoon. That way, he could pour the thicker stuff on top to get the pretty layering effect.

@@frosty_brandon thanks for this, I guess what I was asking was, he used milk as from milk container AND the fluffed up milk he showed in the press. Not all pressed milk.

@@rubengonzales5506 I believe he may have separated the milk and foam after frothing with the French press. That way he could mix the mix and espresso and have the foam sit only on the top without that being the only milk added.

Quick question: when you still have some grounds on the lip after tamping do you just tap them off? I've always done a quick run of the thumb around the lip but I'm now realizing that I'm just leaving oil from my skin on it which sounds awful 😕

because its an iced drink. all bubbles would die in steamed milk by the time itd gone cold.

I have had and seen iced drinks with hot foam, it’s kind of interesting but in the end it melts the ice and makes things a little watery and luke warm.

For me, Warm 40°c full cream milk would actually taste better on iced coffee variants. It's okay to let it melt some ice. I usually like to Add 7mL simple syrup for that size of cup, and a drop of vanilla. For the froth to be as stable as possible, you may choose to make the milk as cold as possible or raise it to around 40°C

@@ChuyR. sometimes pouring on spoon helps if there is warm coffee in irish coffee for example and cold cream so as to stay on top and make clear layers... here it didnt make a difference so just pour it and stir
