1 can of garbanzos, drained
olive oil
2 t. smoked paprika
2 t. salt
curley noodles, boiled and drained
kale, chopped
2-3 T. Dijon mustard
4 T. olive oil
2 T. tahini
juice of one lemon
1/2 t. salt
1/2 t. pepper
3-4 cloves garlic, minced
2 T. nutritional yeast
4 T. water
parmesan
Toss garbanzos with olive oil and seasonings. Bake at 400 until crispy.
Stir kale into warm noodles so the kale can wait a bit. Mix all dressing ingredients together and pour over noodles. Let completely cool before topping with garbanzos and parmesan and serve.
