Your timing couldn't be more perfect. My Miss Kim variety here in Massachusetts are in full bloom and this coming week the temperatures are heading into the mid 70s and the flowers will probably start to brown. Your son reminds me of my dear son but my kiddo is now in his 40s, so a lot older than you. Sharing your dear boy is such a gift to your viewers and his filming skills are truly amazing. His hand is so smooth and how he pans the camera is like a professional. Thank you for all you share here. God bless you and your family.

My sugar I started yesterday is going to liquid like it does with spruce tip syrup. How did you stop this from happening

You can't really stop it. But after some time you can dump out all your sugar on a cookie sheet overnight so it dries out. Then put it in a food processor to break up the chunks.

Hi, I tried to make the lilac sugar yesterday, today the petals are turning brown and the jar is starting to smell bad. Would you have any suggestions for me at this point? Should I burp the jars and also the sugar is turning liquid ish because of the moisture from the flowers. I’m thinking maybe it is a lost cause at this point. But I was also thinking maybe I should turn it into a simple syrup, what would you do or have you experienced this as well? 😊

That is pretty normal actually! Except the smell. There is nothing you can do to prevent it from going brown unless you vacuum seal the jar. And the liquid sometimes happens to me too. I would dump the sugar on a parchment lined cookie sheet and let it dry out a bit. Then pulse it in a food processor and see how it is then. Worse case, if that doesn't help, you could turn it into a syrup easily. Good luck!

How long is the sugar shelf stable for? How long does the lilac scent & flavor last in the sugar?

That depends greatly on the ratio of sugar to lilacs you used. The shelf life would be about one year. But I always use mine up before then ;)

Ok thanks so much!🙏🏼 I have another question for u but about honeysuckles. I’ve been looking for the answer to this all over the internet but can’t find it anywhere! So if my Japanese Honeysuckle flowers don’t have that sweet smell & taste are they still as medicinal?

@@violettraine1029 I think some browning is impossible to avoid. But I like to use it up within a year if possible :)

Lilac tree flowers are all gone. Sad, I guess I'll have to wait till next spring to make the sugar and the infused honey
