Kinda: I was taught by one of my chefs that Chinese cuisine has the 3 textures in addition to western 5 (6?) flavors. Considering these is an crucial part of developing dishes. Crispy (epitomized by pork skin), smooth (custard and flan), and granular (like rice, but it can be dry or wet). Balancing these enhances the tactile pleasure of food. This would have crispy/crunchy of the sugar and the granular wet from the tangerine

I had those tang hulu in china, my best street food in winter. They only sell it in winter, cause it melts in hot weather. They sell mostly hawthorn tanghulu, but they also sell different fruits like tangerine, strawberries, kiwi, even rice balls. So so yummy!

The "rock sugar" part isn't technically required, as you can make your own candy sugar mixture, but the rock sugar is easier to work with since it'll be already prepared; only thing you need to do is melt it.

I thought of making it for dessert for my kids school lunch as a surprise treat, but will it work? As a packed lunch, i mean. I live in a humid climate. Does anyone know and can anyone advice?

I used Cuties Mandarin Oranges to make these. It was so good it was worth getting a sugar burn on my fingers. Once my sugar caramelized I poured in a little water to make a caramel sauce to go with some Flan.

I'm Brazilian and we have a different but similar dessert, it is called "bala baiana" ❤ loved the idea, will try doing your version at home, seems less sugar than Brazilian one 😂

tip - cook the syrup until it gets a yellowish colour Tip - after you're done making tangulu add water in the pot and boil it. It will be easier to clean Tip - don't stir it until it get a yellowish colour
