All you need are 3 ingredients to get started! 1) pineapple peels 2) piloncillo or brown sugar 3) purified water optional cinnamon stick, ginger, and/ or any herbs you have on hand

Is it safe ti use peels? There are documented videos on the amounts of toxins used when growing pineapples in the Caribbeans.

That’s how you make it and it’s been done for a long long time. Give your peel a little scrub and don’t use rotting fruit. If you’d eat the fruit the peel is good, even if the fruit is a bit past the palatable state the peel should still be good for fermentation.
