I like to make sweet potato porridge for breakfast. I grow up eating it in China. It's so simple and easy. Traditionally, all u need is sweet potato and rice. Boil rice and water together in the pot and put the diced sweet potato in the pot, cooked it until the desire consistency. However, i do find that it takes a long time in the morning to make rice porridge. To speed up i replace rice with oats and i cook the sweet potato the night before. U don't need any added sugar in this recipe which is always a good thing! To make it even better, toss some chia seed, flax seeds or any kind of seeds u have on hand. U can also add coconut milk or soy milk to make it more liquidy! I love having it for breakfast, it's really fulfilling!

While that's cooking prepare your toppings! Avocado salsa, spring onions, coriander and a dollop of natural yoghurt :) You could even add some turkey mince in that too Man I'm hungry now.

I love making sweet potato rosti's/hash-browns. Very easy to prepare: - Peel 2 or 3 large sweet potatoes. - Grate using a box grated on the course side into a bowl - Season with a generous pinch of medium grain sea salt and leave for 10 minutes - Drain excess liquid out of the bowl by placing hand over the top of the grated potato - Dump the potato into a clean thin tea towel and tighten up the end to squeeze out as much moisture as possible - Add back to a clean bowl and season with freshly ground black pepper and 4tbps of melted butter. - Form into rough patties or using a ring mold. - Now fry in a pan with 2 or 3 tbps of any oil of your choice on medium heat for 10-15 minutes or until the potato is tender and the edges are golden brown Perfect to serve with fried or poached eggs on top.

A chunk of sweet potato cooked just right in the oven, with a dash of salt, is a thing of beauty. In with the roast, using its soft centre to mop up gravy and meat remnants towards the end of the plate is a landmark in my childhood memories. If one can love a vegetable, it must be this masterpiece of flavour, colour and health, surely.

One of my favorite ways to use them is soup: Cut into chunks, toss with olive oil, salt, pepper, and roast them. In a stock pot, saute onion and a bit of garlic, add roasted sweet potatoes, thyme, and a pinch of cayenne pepper (optional, and to your taste). Deglaze the roasting pan with a bit of your favorite chicken or veggie stock, add it and the rest of the stock to the pot. Simmer until all of the veg is tender. Wiz until smooth. If you are short on time, you can skip the roasting step and just add cubed, raw sweet potato to the pot, but the caramelized bits add loads of flavor.

I started substituting potatoes for sweet potatoes 100% of the time a year or two ago and haven't missed regular one bit. I mash, bake, roast, pan fry, and slow cook them. Sometimes I cook them savory, sometimes sweet, sometimes even in a dessert. I also use different types, orange for sweeter, Japanese for savory or if I want more bite to a dish (red ones get mushier so they are better for mashed). Fun fact: Sweet potato isn't even in the potato family, they are technically the below ground part of a type of morning flower, and as such, have long vines with pretty flowers on them.

The way I like to use sweet potatoes is for vegetable curry. I usually use normal potatoes, pumpkin (hokkaido or something similar), pepper and sweet potatoes the combination of hokkaido pumpkin and sweet potatoes is just the best thing ever. You just roast some onions, garlic and ginger, add the vegetables, roast them with a little oil, add water and some lovely curry masalas and raw turmeric and let the whole thing simmer for 30-45 minutes until it's nice and creamy and there you go, its kind of my own recipe that I just figured out by trial and error and I love to make this, its simple and really delicious!

I live in California and I grew up eating sweet potato. In spanish they're called Camote. be sure to poke a couple of holes on each side and roast at 350 Fahrenheit for 45 to about 1 hour (depending on size). My mom once told me that back in the 1930's, her mother would throw a few whole into the embers of their wood burning stove after dinner. Then the men would put them in their pockets and warm their hands on their way to work at 4:30 in the morning. They would eat them for lunch. They're really good with some milk and cinnamon! So naturally sweet.

Here's a really easy recipe for making sweat potato fries. Grab a bowl. Cut each sweat potato into (ex. 8) wedges. One potato per person. Throw them in a bowl. Add olive oil. Add paprika powder. Add chili flakes, or not. Toss them around. Lay them on an oven tray. And put them in the oven at 180°C for 30-35 minutes. No need to peal the sweat potatoes because there's loads of flavor in the skin too!

When I was a kid, my mother had the most amazing sweet potato fries. She would slice them into strips, paint oil on the sides and bake them for about 45 minutes at 350 degrees F. She'd then melt down a combination of cheddar cheese and mozerella cheese, add chopped green and red peppers, grated garlic, and onions to the cheese sauce. Then pour the cheese sauce over the fries and bake in the oven at the same temperature as the fries for about 5 minutes. Freakin' amazing. 😁👍🏻

Sweet Potatoe & Pumpkin Mash So basically what I do is boil 1/3rd sweet potatoes, 1/3rd of regular potatoes and 1/3rd of pumpkin or butternut squash until they are all nice and soft. I add some salt & 1 vegetable stock cube to my water (always!) for some extra flavor. Mash it all up and then add come cumin, some nigella, nutmeg, pepper, coriander (fresh if you have it otherwise grounded will do nicely as well) - anything you like really! You could also add some garlic, some parsley, just play with it. Some drops of truffle oil, some good butter, etc. can also spunk it up - depending on what you’re serving the mash with. Occasionally I add some coconut cream as well. Then I just grate some cheese (parmesan, povolone, other Italian/French cheeses) on the top and let that gratinate for about 10-15 minutes in a preheated oven on 200°C. It’s yum! You obviously don’t need to gratinate this dish, it’s perfect in and on its own but I’m just cheesy that way.

I love sweet potatoes. My favorite way to make them is to just cube them (I leave the peel on, but you can remove it), spice them with salt, pepper and a bit of thyme, drizzle them with olive oil, add one or two sliced onions and roast them in a 180°C oven for about 20 minutes, flipping everything once halfway through. They also go into my harvest stew:3 slices bacon or turkey bacon, or1 tablespoon lard; 2 tablespoons olive oil; 1 onion, chopped; 2 cloves garlic, chopped; 1 bell pepper, chopped; 1 teaspoon dried chili; 1 teaspoon dried thyme; 1 cup cooked kidney beans; 1 cup fresh corn; 2 cups diced sweet potato; 2 cups diced squash or pumpkin; 2 fresh tomatoes, diced; 1 cup chicken, veal or vegetable broth; salt and pepper to taste. In a large pan, cook the bacon over medium heat. Add the olive oil (or if using lard, heat the lard and oil together). Add the onion, garlic and bell pepper, sauté until the onion is translucent. Add chili and thyme. Add everything else except the corn and simmer for about 10 minutes, then add the corn and simmer another 10 minutes. Top with avocado slices and sliced scallions, and serve with a crispy bread.

I make a sweet potato mash. I add milk and a bit of cream cheese to the mash (instead of butter or cream). Gives it a little bit of salt to balance out the sweetness. I'll often add a bit of pumpkin to the mash as well. Goes great with roasts, and freezes/reheats well. I also use it when making pumpkin soup. 2 parts pumpkin, 1 part sweet potato, 1 part normal potato, cook it all in stock (usually chicken) with herbs of choice (I usually go with a bit of thyme, rosemary or lavender) until super soft, and then whizz altogether. Add a bit of thickened cream and heat through, then serve with cheese toasties.

My family originates from Emilia Romagna, in Italy: the land of stupped pasta and most importantly of pumpkin ravioli. I love them and I love pumpkin, but a few years back we had the idea to use sweet potatoes for ravioli: they are delish. Sweet potatoes, though, are much drier than pumpkin or squash, so you can make them half and half with pumpkin or just dilute the filling with a dash of milk (or vegetable milk).

they work very well in veggie-lasagne, i slice them with skin and put them in the ofen while its heating up for the lasagne, prepare the rest (i often use cooked fresh spinach with garlic and mozzarella, a tomatoe-veggie-sauce, maybe with a quorn substitute for mincedmeat, and i put champignons and boletus in my bechamel. i also use some cilantro and basil - quorn used well is a very good substitute btw) also, you could put it with spicy oiled endivies, wallnuts and pumpkin in the ofen.

(400 for a half hour and then broiling at 450 until they're crisp tossing v often) i could eat these all day! they're basically lower effort sweet potato fries, sweet potato tots if you will. sometimes i squeeze lemon juice over them. they're super good added to salads too. also! my favorite accidental way to eat them is the little bits of caramelized sugar you get on the pan when you roast them whole. it's vegetable candy.

I often just bake a sweet potato, just wash, straight in the oven, I usually put it on 200 for around 40 mins-hour depending on size. I eat it like a jacket potato, the skin is lovely and crispy :) I often eat it with cheese and beans on top, with salad! Yum

I take a sweet potato and make little holes in it with a fork everywhere. Then, I put it in the microwave for about four minutes, I turn it around and microwave it for another four minutes. Then I cut it open and add some bacon, maple syrup and cinnamon. It's so easy and delicious!

An amazing salad (I don't have exact quantities, sorry! but it's pretty easy to eyeball as much as you need for the amount of people): - Sweet potato, cubed, drizzled with olive oil, roasted in oven with salt and pepper. - Baby spinach - Olive oil - Balsamic vinegar - Fetta, cubed/crumbled - Roasted pine nuts Toss it all together, viola! Add anything else your heart desires. It's DE-licious.

I love sweet potaoes. Never liked them growing up. I like them now. Started eating them more for thier potassium and incredible fiber. I love making a root veggie "hash" beets, sweet potatoes, potatoe, carrots sometimes and mushrooms. All fried in water. Incredible flavour. Now I'm experimenting with sweet potatoes boats and other recipes.

Cube, dust with brown sugar and cinnamon, toss in the oven/microwave til fork tender. It's to die for. You could probably cut out the brown sugar to save some calories. You can have it as a side or as a dessert. My guess is that you've had this for thanksgiving but with some marshmallows added.

Par-boil sweet potato wedges for a couple of minutes, cool slightly, toss lightly in oil, sprinkle with salt, smoked paprika and then sprinkle with lemon juice. Bake in a single layer on a tray in a ht oven maybe 20 mins, turning half way. Serve with fried fish. Tastes great.

Cube them, cut them into wedges, or use a french fry cutter, then coat with oil, salt, cinnamon, and paprika (normal or smoked). Bake at 400 for 25-45 minutes (depending on how thick the end product is cut). Simple and delicious!

Garlic and chilli sweet potato wedges, tinkered about and found the perfect way to make them! Cut one large sweet potato into wedges, place in a bowl and add two cloves of crushed garlic, and one/two chopped chillies, then sprinkle some good olive oil or coconut oil, add some Cajun spicing and leave to marinate. Longer the better! Then cook at 180 for 20-30 minutes until crisp on outside!

Sweet potato curry: Roast spices for one minute in one tablespoon oil. Spices include red chilli, coriander powder, cumin powder, garam masala, turmeric and asafoetida. add water and sweet potatoes. Water should be just enough to cook sweet potatoes. In the end, add desiccated coconut, sesame seeds and salt. You could also do half potato and half sweet potato (for people who do not enjoy the taste or are new at trying sweet potato). Love this recipe!!!! Its my go to dinner. Takes very less time to cook. And of course enjoy it with Indian bread or rice :)

I love the sweet potato mash recipe where you microwave it for 14 mins and mix it with soya sauce, lemon and mango chutney and coriander leaves. I feel it is a beautifully balanced recipe for the sweetness of the sweet potato. The only thing I add to the one I make is a sprinkle of Chaat masala which is a spice you can use uncooked. I'm looking for the video of the excerpt I saw this recipe on from your 30 min meal program.

I cook mine by cutting them into disks like a chip, some came out thin some thicker, I put them on a cookie sheet, put some olive oil and sea salt on them, then laid them out in rows. Cooked them in the oven on 350 for about 20 mins. They were to die for!! Some of the thin ones came out crispy like a chip which were amazing and the others were fluffy and amazing on the inside. I always left the skin on too.

We have loads of sweet potato varieties in Peru and a LOT of recipes. I decided to combine both of my roots so I made a jacket sweet potato, fill it up with whatever u want and there you go. If u want to go for an all peruvian dish, there's no better than a Chicharron sandwich. Fry some seasoned pork chops, make some sweet potato crisps or chips (the one you like the most). Cut an onion and peruvian chili into thin plumes and marinate in lime juice, vegetable oil, salt, pepper and coriander for about an hour. Put everything between two slices of bread and it's done!

Here is one of my fav wys to eat sweet potatoe, boil it whole with the skin (make sure to really scrub all the dirt of it), until it's tender, really tender. Then once it's cooked I cut it in half and with the spoon and taking care no to destroy the skin (we will use the skin as a bowl.) scoop out all the pure goodness of the center, mix it with a cream cheese, salt, pepper and some parmesan cheese, them put bake all that pure goodness back into the sweet potatoe skins, like to top it of with a slice of some cheese, I use port salut (it's a low calorie, mozzarella like cheese - feel free to use whatever you like), some more parmesasan on top and stick it in the oven until the cheese it all melted. It's easy and yummy!!!

My favourite way to use a sweet potato is for breakfast! I chop it up into tiny little cubes and fry it in grapeseed oil in a pan on low-medium heat. I add some smoked paprika and get a delicious sweet potato hash that I eat with eggs! Make sure the yolk is extra runny and you will start your day off smashingly! Loved the video Jamie! A really great roasted sweet potato/roasted red pepper blender soup: roast whole sweet potato and bell pepper : cool off pepper and strip skin off, put them in a blender with a bit of chili flakes, one small clove of garlic juice of half a lemon and a cup of water. Don't even need salt or olive oil, it's so flavour rich.
