This recipe is so simple and delicious at the same time. Surprise your family or guests.
(Don't be surprised, I don't like pumpkin skin. But you can leave it on if you like).
I͟n͟g͟r͟e͟d͟i͟e͟n͟t͟s͟ f͟o͟r͟ 2͟ s͟e͟r͟v͟i͟n͟g͟s͟:
1kg Hokkaido pumpkin
1 teaspoon oil
1 pinch salt and pepper
1 carrot
150g cherry tomatoes
150g onion
500g minced meat
1 teaspoon salt
1 teaspoon pepper
1 tablespoon tomato paste
125ml cream
1 teaspoon vegetable stock
150ml water
125g feta cheese
First pre-bake the pumpkin at 180°C top/bottom heat for 20 minutes, then bake again at 200°C top/bottom heat for 10 minutes.
Simmer the minced meat filling for 10 minutes.
