In this video Nanaaba prepares Jamaican inspired Rice and Peas and crispy Escovitch Fish.
INGREDIENTS:
Rice and peas
* 2 cups of small red beans soaked to soften, and boiled in 8 cups of water till al dente.(softened but not mushy)
* 3 cups jasmine rice washed
* Tsp salt
* Tsp bouillon
* 4 scallions
* 1 scotch bonnet chili
* 3 sprigs thyme
* 1 tbsp green herb and spice blend (optional)
* 16 ounces coconut milk
Escovitch (pickled vegetables)
* 4 bell peppers (red, yellow, orange, and green)
* 1 carrot
* 1/2 white onion
* 2 Scotch bonnets
* 10-12 inch hole all spice/pimentos
* 1/4 tsp crushed black pepper
* 1 tsp salt
* 1/4 cup sugar
* 2 cups water
* 1 cup distilled vinegar
* 1 star anise
* 1 clove galic
Fried red snappers
* 3 red snappers (1 lbs each)
* Season with 1 tbsp green blend, 1/2 tsp salt, 1/2 tsp old bay seasoning, juice of 1/2 lemon/1 tbsp juice, 1/2 tsp lemon pepper, 1 tsp paprika, 1 tbsp oil.
* Cooking oil for deep frying
