I've had the chance to eat grade 5 wagyu steak prepared by a professional cook, once in my life thus far. Shit was more like butter than steak, but with this intense flavor. 10/10 I can't afford to do it again, but I want to be able to.

YO! I've been distantly following you via Funnyjunk for a few weeks now. I'm a chef in a busy restaurant. I've cooked a LOT of steaks and I'd like to make a suggestion or two. If you're using a rough surfaced modern cast iron pan (and it looks like you are) throw down just a tad more oil so you get even heat transfer to the surface of your steak. I like a blend of peanut oil and clarified butter for the high smoke point. I can see you developed good crust on some parts of your steak, but it was a bit patchy. More even contact and heat transfer will help remedy that. I'd also say either invest in carbon steel or vintage cast iron (either will do). The smooth surface helps you hold onto what you do build, since it doesn't get lost in those nooks and crannies in the pan. Please only take these pointers as gentle suggestions from someone excited to encourage the love for food and cooking. Keep up the good work!
