Additionally, I've only ever had WY 🍣. The fish that you have access too are amazing. I've eaten more rainbow trout and Walleye than anything else. I hope to try sushi in Japan. I used to think I wanted to go to Tokyo, however Shogo has convinced me Kyoto is the way to go!

Hi, Shogo. I am really jealous of your meal as we can’t enjoy it here. With regard to Octopus: It is tenderised by beating it on rocks, and then you have a choice of really fast cooking or really slow cooking, because medium cooking makes it very tough to eat. I am assuming that your ‘rare’ octopus was cooked really fast over very high heat for a very short time to leave it ‘rare’ like a rare steak might be. I hope this helps…

When theysay "mature" do they mean the fish itself was older or the fish is aged after it has been caught? It didn't look like the fermented fish I've seen on other programs.

A few months ago around this time 2, 3AM where I am I with seeing KZbin for videos, for no reason at all I wrote down live video in Japan, and the 1st video popped up was called Japan Live- Japan Walk. Ah loved this episode. I don't recall ever trying mature sashimi, but I will have to try that next. The sake part made me nostalgic for this flowery/fruit liquor I had in Kyoto at a Yakitori place near the Imperial castle. It also gave me flashbacks of the Ponshukan Sake Museum in Niigata , which was one of the best sake experiences I had in JP. Nothing like forgetting how much you have been drinking and blacking out trying 30 different sakes and then trying not to pass out in a mineral bath XD.
